These hearty treats are packed with the rugged goodness of oats, pecans and coconut, rounded off with the rich sweetness of chocolate chips. Whether you’re saddling up for a day on the ranch or just craving a hearty snack, these cookies are sure to satisfy your inner cowboy.

Ingredients:

  • 1 cup sweetened desiccated coconut
  • 3/4 cup chopped pecans
  • 2 cups old-fashioned oats
  • 1 1/2 cups packaged brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 2 cups chocolate chips
  • 1 cup butter, softened
  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method:

Preheat the oven to 350°F (175°C) and line baking sheets with greaseproof paper.

Whisk together the flour, baking powder and salt in a bowl.

In a separate large bowl, cream together the butter, brown sugar and sugar until light and fluffy.

Beat in the eggs one at a time, then add the vanilla extract.

Gradually stir in the dry ingredients until well combined.

Stir in the oats, chocolate chips, coconut and pecans.

Drop by rounded tablespoonfuls onto the prepared baking trays.

Bake for 10-12 minutes, until lightly browned around the edges.

Cool on the trays for a few minutes before transferring to wire racks to cool completely.
