White Chocolate Cheesecake on Cocoa-Chocolate Base

White chocolate cheesecake is an interesting variation of the classic cheesecake. After the first bite, it indulges the taste buds with a rich chocolate flavor and creamy consistency! Try the recipe for white chocolate cheesecake!

Ingredients

Base:

  • Semolina flour: 15 dag
  • Dark chocolate: 30 g
  • Powdered sugar: 2 tablespoons
  • Cocoa: 1 teaspoon
  • Pinch of salt
  • Butter: 60 g
  • Egg yolk: 1 piece
  • Cold water: 1 tablespoon

Filling:

  • Curd cheese: 60 dag
  • White chocolate: 50 g
  • Heavy cream (30% fat): 200 ml
  • Vanilla pudding: 2 tablespoons
  • Eggs: 3 pieces
  • Egg white: 1 piece
  • Granulated sugar: 1/2 cup
  • Butter: 50 g

White Chocolate Cream:

  • Heavy cream (30% fat): 250 g
  • White chocolate: 150 g
  • Mascarpone cheese: 2 tablespoons

Preparation

  1. Base: Mix semolina flour with cocoa and grated chocolate, add chopped cold butter, sprinkle sugar, pour in water, and quickly knead the dough. Line the bottom of a 24 cm cake tin with the dough, put it in the fridge while preparing the filling.
  2. Filling: Break the white chocolate into pieces, transfer to a bowl, melt it in a hot water bath until smooth.
  3. Grind the curd cheese in a grinder, add eggs, egg white, butter, pour in cream, sprinkle sugar and pudding, briefly mix only until combined to avoid unnecessarily aerating the mixture, finally pour in the melted white chocolate and mix.
  4. Pour onto the chocolate crust. Place the cheesecake in a preheated oven at 180°C and bake for 15 minutes, then reduce the temperature to 160°C and bake for another 30 minutes – watch to prevent the cheesecake from browning, it should remain white! If necessary, cover the top with aluminum foil. Completely cool after baking.
  5. White Chocolate Cream: Bring the heavy cream to a boil, let it cool slightly, add broken chocolate pieces, leave for a moment to dissolve, then mix until smooth. Chill in the fridge overnight. The next day, add mascarpone cheese to the mixture and whisk until fluffy cream is obtained, spread it over the cold cheesecake, decorate with grated chocolate and pralines.
