Vegan brownie cookies

Extremely chocolatey, plant-based cookies with a soft center and crispy crust. Easy to prepare and delicious in taste.

Ingredients

  • Coconut sugar: 115 g
  • Dark chocolate: 100 g
  • Cocoa powder: 30 g
  • Peanut butter: 115 g
  • Spelt flour: 135 g
  • Red apple: 100 g
  • Baking powder: 0.5 teaspoon
  • Baking soda: 0.5 teaspoon
  • Salt: a pinch

Preparation

Preheat the oven to 180°C.

Combine mango puree (or apple), peanut butter, and coconut sugar in a large bowl. Mix until the ingredients are well combined. Sift flour, cocoa powder, baking powder, baking soda, and salt into the thick, previously blended mixture. Mix until all ingredients are combined. The dough should be very thick.

Add finely chopped chocolate to the mixture. Mix. Shape small balls from the prepared dough and place them on a baking sheet lined with parchment paper, leaving some space between them. Gently flatten each ball and sprinkle with salt.

Bake the cookies for about 10-15 minutes. Remove from the oven and let them cool down.
