Tiramisu Baked Oats

This innovative dish takes the essence of classic tiramisu and transforms it into a nutritious morning treat. With the perfect balance of espresso-infused oats and a creamy topping reminiscent of mascarpone, each spoonful will transport you to a cosy café in the heart of Venice.

Ingredients:

For the oatmeal:

  • 1 banana
  • 90g Mornflake Superfast Oats
  • 30g Vanilla Whey Protein Powder
  • 1 egg
  • Splash of milk
  • Pinch of salt

For the topping:

  • 4 tablespoons Greek yoghurt
  • Liquid sweetener of choice

Optional: Vanilla extract

  • 2 shots of espresso + 50ml water
  • Cocoa powder

Method:

Preheat the oven to 180°C (350°F).

Mix the banana, oats, protein powder, egg, milk and salt together until you have a smooth batter.

Pour the batter into a greased ovenproof dish.

Bake for 25-30 minutes or until the top is golden and the oats have set.

Mix the Greek yoghurt with your preferred sweetener and optional vanilla extract.

Mix the espresso shots with the water.

Remove the oatmeal from the oven and allow to cool slightly.

Pour the espresso mixture over the oatmeal.

Top with the sweetened Greek yoghurt.

Sprinkle with cocoa powder before serving.
