Sugarfree Beetroot Halwa recipe is a wonderful choice for those who want to enjoy a classic Indian dessert without the added sugar. It’s a healthier alternative that doesn’t compromise on taste. The natural sweetness of the dates and the earthy flavour of the beetroot create a delicious combination that’s both satisfying and nutritious.
Ingredients:
- 1 large beetroot, grated
- 1 cup dates, stoned and chopped
- 2 cups milk
- 1 tbsp ghee (plus 1 tbsp more if desired)
- 8 cashew nuts
- 1/2 tsp cardamom powder
Method:
Soak the dates in warm water for about 30 minutes to soften them. Once they’re soft, grind them into a smooth paste.
Heat 1 tbsp ghee in a heavy bottomed pan. Add the grated beetroot and sauté over a medium heat until the raw smell disappears, about 8-10 minutes.
Add the date paste to the pan with the beetroot and mix well.
Pour in the 2 cups of milk and cook over a medium heat, stirring constantly, until the milk is completely absorbed and the mixture thickens.
While the halwa is cooking, in a separate small pan, fry the cashew nuts in the remaining 1 tbsp of ghee until golden brown.
When the halwa has thickened to your liking, add the roasted cashews and cardamom powder. Mix well.
Cook for another 2-3 minutes and then switch off the heat. Allow to cool slightly before serving.
