Easy no-bake cheesecake with strawberry mousse, made with cheesecake curd and cream. A delicious cake that you will prepare quickly and pleasantly. An ideal choice for springtime.
Ingredients:
- strawberries, 600 g
- powdered sugar, 100 g
- lemon juice, 2 tablespoons
- gelatin, 20 g (2 tablespoons)
- cream 36% or 30% (for whipping, well chilled), 250 g
- cheesecake curd, 500 g
- ladyfingers (like for tiramisu), 200 g
For decoration:
- cream 36% or 30% (for whipping, well chilled), 250 g
- powdered sugar, 4 tablespoons
- fresh strawberries
Preparation:
Blend the strawberries into a mousse, then strain through a sieve to remove the seeds. Mix the mousse with half of the powdered sugar (50 g).
In a saucepan, pour the lemon juice, add about half a cup of strawberry mousse, mix and heat until hot. Remove from heat, add the gelatin and stir until completely dissolved. Finally, combine with the rest of the mousse.
Whip the cold cream with the remaining powdered sugar (50 g) until stiff, then mix with the cheesecake curd.
Prepare a 23 cm diameter form. Arrange the halved ladyfingers (sugar side out).
Add the cheesecake mixture to the strawberry mousse in three parts, stirring each time with a whisk to combine the ingredients.
Pour the mixture into the form and refrigerate for a few hours until set.
Decorate with whipped cream and powdered sugar, and garnish with halved fresh strawberries.
