This easy-to-make, highly aromatic bake with dried apricots and a layer of thick icing melts in your mouth!
Ingredients
- Eggs: 3 pieces
- Demerara sugar: 150 g
- Vanilla sugar: 1 packet
- Margarine: 150 g
- Wheat flour: 220 g
- Baking powder: 1 teaspoon
- Gingerbread spice: 2 teaspoons
- Orange zest, grated: 1 tablespoon
- Dried apricots: 20 g
Icing
- Icing sugar: 200 g
- Orange juice: 20 ml
- Dried apricots: 80 g
Preparation
Whisk eggs with demerara sugar and vanilla sugar until fluffy. Gradually add melted margarine. Mix flour with baking powder and gingerbread spice, then add to the remaining ingredients. Stir thoroughly, then add grated orange zest and chopped dried apricots.
Pour the mixture into a cake tin (diameter: 21-22 cm). Bake for approximately 30 minutes at 175°C. Allow the baked cake to cool.
Mix icing sugar and orange juice until a smooth icing forms. Once the cake has cooled, pour the icing over it and sprinkle with chopped dried apricots.
