Shortbread Cookies with Whipped Cream and Rum-Soaked Fruits

This delightful dessert suits any occasion. Elegant, simple, and delicious. What more could one want?

Ingredients

  • Flour: 350 g
  • Butter: 100 g
  • Sugar: 60 g
  • Baking powder: 2-3 teaspoons
  • Egg: 1 piece
  • Salt: a pinch
  • Milk: 5 tablespoons
  • 30% cream: 300 ml
  • Powdered sugar: 2 tablespoons
  • Fruits
  • Rum: 50 ml

Preparation

O. Soak fruits in rum and refrigerate.

  1. Mix flour with salt and baking powder. Add chopped butter and sugar – all this preferably on the countertop.
  2. In the middle of the above mixture, make a hole, add the egg and milk. Chop with a knife until the ingredients combine – but only roughly 😛
  3. Knead and mold the dough thoroughly by hand.
  4. Roll out the dough to a thickness of about 1 cm (leave it quite thick). Cut out circles – the size of your choice 🙂 Brush the circles with milk.
  5. Place on a baking sheet lined with parchment paper and bake at 200 degrees Celsius for about 10-13 minutes – until golden brown.
  6. Let the cookies cool. Slice them in half horizontally.
  7. Lightly whip the cream, adding powdered sugar.
  8. Place fruits on the bottom half of the cookie, cover them with whipped cream, then arrange more fruits. Cover with the other half of the cookie.
