Rhubarb Pancakes

With a touch of maple syrup, they are an incredibly delicious dish.

Ingredients

  • 1 bunch of rhubarb, about 500 g
  • Juice of 1 orange or 1/2 cup orange juice
  • 20 dates
  • 50 g brown sugar

  • Maple syrup

Preparation

  1. Wash the rhubarb, trim the tough ends, and cut into pieces. Pit the dates and chop them into pieces as well.
  2. In a large skillet with a thick bottom, place the rhubarb, add the brown sugar, and pour in the orange juice. Bring to a boil, cover, and simmer over low heat until the rhubarb is tender.
  3. Uncover the skillet, add the chopped dates, stir, increase the heat, and cook, stirring, until excess liquid evaporates and you achieve a jam-like consistency with the rhubarb. Remove from heat.
  4. Spread the rhubarb compote over the pancakes, fold them in half or roll them up. Serve drizzled with maple syrup.
