Ingredients

  • Plums 200 g
  • Flour 150 g
  • Sugar 60 g
  • Vanilla sugar 1.5 teaspoons
  • Baking powder 3/4 teaspoon
  • Ground cinnamon 1 teaspoon
  • Salt a pinch
  • Egg 1
  • Oil 60 ml
  • Buttermilk 100 ml
  • Flour 70 g
  • Cold butter 35 g
  • Brown sugar 30 g
  • Mint leaves for decoration

Preparation

  1. Wash the plums, remove the pits, and dice them. In one bowl, combine the dry ingredients: flour, baking powder, cinnamon, sugar, and vanilla sugar.
  2. In another bowl, combine the egg, oil, and buttermilk.
  3. Pour the wet ingredients into the dry ones and mix only until combined, then add the plums.
  4. In a bowl, mix the flour and brown sugar. Add the cold butter and use your fingers to combine the ingredients into a crumble. Set the crumble aside in the refrigerator.
  5. Spread the batter into a muffin tin (12 muffins) and sprinkle the crumble on top. Bake the muffins for about 20 minutes at 180 degrees Celsius.
