Pistachio Ice Cream

A simple recipe for delicious homemade pistachio ice cream. Best enjoyed with sweet wafers!

Ingredients

  • 200 g shelled pistachios
  • 300 g sweetened condensed milk
  • 500 ml chilled 30% fat cream
  • 2 teaspoons vanilla paste
  • a pinch of salt

Preparation

Step 1: Peel the pistachios and grind them into a paste.

Step 2: Mix the pistachio paste thoroughly with the sweetened condensed milk and 100 ml of the cream.

Step 3: Whip the chilled cream together with the vanilla paste until fluffy, then fold in the pistachio mixture.

Step 4: Transfer the prepared pistachio mixture into a freezer-safe container, seal tightly, and freeze for at least 8 hours.

For best results, freeze the ice cream at -16°C to make scooping easier.
