Papchi

The papchi recipe is a wonderful way to explore traditional Indian cuisine right in your own kitchen. It’s a simple yet rewarding process that results in a sweet, crunchy snack perfect for any time of day. The aromatic cardamom and optional kewra essence will fill your home with an inviting aroma, and the satisfaction of creating something from scratch is second to none.

Ingredients:

  • 2 cups wholemeal flour
  • 8 tbsp rice flour
  • 1/2 cup ghee (clarified butter), divided
  • 1/2 teaspoon salt
  • Water (as needed for kneading)
  • 2 cups sugar
  • 2 teaspoons cardamom powder
  • 6 drops of kewra essence (optional)
  • 1 cup water (for syrup)
  • Oil (for frying)

Method:

In a mixing bowl, combine the whole wheat flour, rice flour, half the ghee (1/4 cup) and salt.

Gradually add the water and knead to a soft dough.

Cover the dough and leave to rest for about 30 minutes.

After resting, divide the dough into small portions.

Roll each portion into a thin sheet and cut into slices using a cookie cutter or bottle cap.

Heat the oil in a frying pan.

Fry the slices until golden brown and crispy.

Remove from the oil and drain on kitchen paper.

In a separate saucepan, combine the sugar, cardamom powder, kewra essence (if using) and water.

Cook until the syrup has the consistency of a syrup.

Dip the fried slices into the warm sugar syrup, making sure they are well coated.

Place them on a tray and allow the syrup to crystallise.

Once the papchi have cooled and the sugar has crystallised, they’re ready to serve.
