Pancakes with Custard and Chocolate

Pancakes filled with custard and chocolate make an incredibly delicious option for a sweet breakfast or an easy-to-prepare dessert.

Ingredients

  • 3 large eggs
  • A pinch of salt
  • 1 level tablespoon of sugar
  • 2 level tablespoons of vanilla custard powder
  • 3 tablespoons of milk
  • Optionally, a pinch of baking powder
  • 1 teaspoon of butter for frying
  • 1 teaspoon of chocolate chips or chopped milk chocolate

Additionally

  • 200 g mascarpone or cream cheese
  • 1 level tablespoon of powdered sugar
  • Several strawberries
  • Optionally, a few chopped pistachios or peanuts

Preparation

Separate the egg whites thoroughly from the yolks.

Whisk the egg whites with a pinch of salt into stiff peaks for about 2-3 minutes at high speed using a mixer. Add sugar (1 tablespoon) and continue mixing for 3 more minutes.

In a separate bowl, mix the egg yolks with milk (3 tablespoons), custard powder (2 level tablespoons), and optionally add a pinch of baking powder. Pour this mixture into the whipped egg whites and gently fold together using a whisk.

Heat butter (about 1 level teaspoon) in a medium-sized frying pan. Spread the egg mixture evenly over the surface of the pan. Sprinkle chocolate chips (1 slightly heaped teaspoon) evenly over the pancake batter.

Fry on both sides for about 3 minutes over low/medium heat (preferably covered). Once the pancake is nicely browned on the bottom, flip it over to cook the other side (a longer, wider spatula works best for flipping). Remove from the pan.

Once the pancake has cooled slightly, mix mascarpone (200 g) or cream cheese with powdered sugar (1 level tablespoon) and spread the mixture over the center of the pancake. Add a few slices of strawberries.

Fold it in half and optionally sprinkle with chopped pistachios or peanuts. Enjoy!
