Pancakes with coffee syrup

Ingredients

Coffee Syrup

  • Sugar – 150 g
  • Coffee – 2 teaspoons
  • Butter – 50 g
  • Fresh mint – 2 g
  • Lime – 1 piece
  • Cream 30% fat – 150 ml

Pancakes

  • Vanilla sugar – 1 packet
  • Egg – 1 piece
  • Butter – 50 g
  • Milk – 200 ml
  • Water – 50 ml
  • Wheat flour – 180 g

Preparation

Melt the butter. Crack the egg into a bowl, add vanilla sugar, and mix with a whisk. Once the sugar is dissolved, add milk and a splash of water. Mix. Gradually add flour and melted butter. Grease a frying pan with a bit of oil. Fry the pancakes on both sides until golden brown.

Lightly heat another pan. Sprinkle sugar over the entire surface and melt (do not stir!) until it turns a light golden color. Add frozen butter, cut into pieces. Add a splash of water and wait until the caramel detaches from the pan. Then add the cream and another splash of water. Toss in a few coffee beans. Cook until the sauce reduces and changes color. Season the sauce to taste with lime juice. Chop the mint and add it to the sauce. Dip the pancakes one by one into the sauce in the pan and fold them into triangles. Place the finished pancakes on a plate and drizzle with a bit of sauce.
