Pancakes with Cheese Filling and Plum Jam

Delicious pancakes with a fluffy cheese filling (made with whipped cream) served with plum jam. A perfect treat for any occasion!

Ingredients

Pancake Batter:

  • all-purpose flour: 115 g
  • eggs: 2
  • milk: 300 ml
  • sugar: 1 tablespoon
  • vanilla sugar: 1 tablespoon
  • pinch of salt
  • melted coconut oil or butter: 30 g
  • optional: yeast: 1/3 teaspoon

Filling:

  • cream cheese: 250 g
  • vanilla sugar: 1 tablespoon
  • heavy cream: 125 ml
  • powdered sugar: 3 tablespoons

To Serve:

  • plum jam

Preparation:

Pancake Batter:

Sift the flour into a bowl. Add the eggs, milk, sugar, salt, and melted butter or coconut oil, and mix until smooth. If using, add the yeast. Cover the bowl and let the batter rest for about 30 minutes. Mix again before cooking. Cook about 8 pancakes.

Filling:

Mix the cream cheese with the vanilla sugar. Gently fold in the whipped cream mixed with powdered sugar until well combined.

Fill each pancake with the cheese filling and fold into triangles. Heat a pan and cook the filled pancakes on both sides for about 1 1/2 minutes each.

Serve on a plate, dusted with powdered sugar and optionally a pinch of cinnamon. Top with plum jam.
