Ingredients:
- 1 1/2 cups all purpose flour
- 1 1/4 cups milk
- 3 tablespoons butter, melted
- 1 egg
- 3.5 teaspoons baking powder
- 1 tablespoon white sugar
- 1/4 teaspoon salt (or more to taste)
Method:
In a large bowl sift together the flour, baking powder, sugar and salt.
In a separate bowl, beat the egg with the milk and melted butter.
Pour the wet ingredients into the dry and stir until just combined. The dough should be slightly lumpy.
Heat a lightly oiled griddle or frying pan over a medium heat.
Pour or scoop the batter onto the griddle, using about 1/4 cup for each pancake.
Cook until bubbles form on the surface of the pancake and the edges are slightly dry, about 2-3 minutes.
Flip the pancake and cook until browned on the other side, about 1-2 minutes more.
