Orange and Kumquat Tart

Crumbly pastry, orange cream, and sweet kumquats – prepare a tart that not only looks beautiful but also tastes delicious!

Ingredients

Orange Cream:

  • Sugar – 75 g
  • Eggs – 3 pcs.
  • Candied orange peel – 25 g
  • Oranges – 2 pcs.
  • 30% cream – 400 g

Decoration:

  • Sugar – 80 g
  • Cinnamon – 1 g
  • Kumquats – 80 g
  • Orange juice – 80 ml
  • Marzipan – 100 g
  • Cinnamon stick – 3 g

Crumbly Pastry:

  • Icing sugar – 60 g
  • Cinnamon – 1 g
  • Egg yolk – 1 pc.
  • Butter – 120 g
  • Salt – 1 pinch
  • Wheat flour – 190 g

Preparation

Step 1: Knead the Crumbly Pastry Quickly knead smooth dough from diced butter and the remaining ingredients (if necessary, add 1-2 tablespoons of cold water). Refrigerate the dough for a minimum of 2 hours.

Step 2: Bake the Pastry Roll out the dough on a bit of flour and cover the bottom of the tart pan lined with parchment paper, forming a 2-3 cm high edge. Prick the dough with a fork several times. Cover with parchment paper, weigh down with dried beans or peas. Bake the base in an oven preheated to 200°C for 10 minutes.

Step 3: Prepare the Orange Cream Finely chop the candied orange peel. Blanch 1 orange, dry, finely grate the peel on a grater, then squeeze both oranges. Measure 180 ml of juice, whisk with orange peel, candied orange peel, sugar, and eggs. Add cream and mix.

Step 4: Bake the Tart Remove the weight from the crumbly dough and bake for another 5 minutes. Then pour the orange cream onto the base. Reduce the oven temperature to 120°C and bake the tart for another 70 minutes until the cream sets. Remove and let cool completely.

Step 5: Prepare the Tart Decoration Pour hot water over the kumquats, slice them, removing the seeds. Boil orange juice and sugar with a cinnamon stick. Add kumquats and cook for 2-3 minutes until they are glazed. Drain the syrup, continue cooking for 1 minute, then pour it over the kumquats and let cool.

Step 6: Decorate the Tart Remove the tart from the pan. Roll out the marzipan and cut out stars one by one, sprinkle with cinnamon. Place the stars on top of the tart. Decorate the tart with kumquats and drizzle with a little syrup.
