Delicious and healthy oatmeal cookies without white flour and sugar.
Ingredients
- Almond meal or ground almond flakes, 3/4 cup
- Wheat or rice flour, 1/2 cup
- Baking soda, 1/2 teaspoon
- Oats, 1 cup
- Coconut flakes, 1/2 cup
- Mix of small raisins and dried cranberries, about 80 g
- Butter or coconut oil, 125 g
- Honey, 3 tablespoons
Preparation
Preheat the oven to 150 degrees C. In a bowl, mix the almond meal, flour, and baking soda. Add the oats, coconut flakes, and the mix of raisins and cranberries, and mix well.
In a saucepan, melt the butter with honey and 1 tablespoon of water. Pour into the bowl with the dry ingredients and mix thoroughly.
Form the mixture into balls (about 3 cm in diameter), then flatten them into discs (about 4 cm in diameter and 1.5 cm thick). Place them on a baking sheet lined with parchment paper, keeping some distance between them.
Place in the oven and bake for 15 minutes.
