New York Cheesecake

New York cheesecake is an incredibly delicate in taste and texture cheesecake, distinguished by a crust made from cocoa cookies. If you are a fan of traditional cheesecake, then this New York style one will surely delight you.

Ingredients

  • Cottage cheese: 1 kg
  • Butter: 1/2 stick
  • Cocoa cookies: 180 g
  • Eggs: 3 pieces
  • Cake flour: 90 g
  • 30% cream: 1/2 cup
  • Sugar: 3/4 cup

Topping

  • White chocolate: 100 g
  • 18% cream: 2 tablespoons
  • Lemon zest sugar for cakes and desserts: 1 tablespoon
  • Lemon juice: 2 tablespoons

Preparation

  1. Bring eggs to room temperature, chill the cream in the refrigerator, and melt the butter over low heat. Preheat the oven to 180 degrees Celsius in top and bottom heat mode, and place a heatproof dish filled halfway with water on the bottom.
  2. In a blender, crush the cookies into powder and mix with melted butter. Press the prepared crust onto the bottom of a springform pan lined with parchment paper and bake in the oven on the middle rack for about 15 minutes.
  3. Meanwhile, place cottage cheese in a bowl, add eggs, flour, cream, and sugar, and mix with a mixer or whisk until smooth.
  4. Pour the prepared mixture onto the baked crust and bake for an hour, checking occasionally to ensure the top of the cake doesn’t brown.
  5. Remove the baked cheesecake from the oven immediately.
  6. Melt the chocolate over low heat and mix it into a smooth mixture with lemon juice, cream, lemon zest sugar, and lemon juice. Pour the prepared topping over the still-warm cheesecake.
  7. Once cooled, place the cheesecake in the refrigerator overnight.
