Mini apple cinnamon muffins

Mini apple cinnamon muffins

Moist and quick to make mini desserts made from yogurt dough, no mixer needed!

Ingredients

  • 125 ml (1/2 cup) natural yogurt
  • 2 eggs
  • 125 ml melted butter or vegetable oil
  • 240 g (1 and 1/2 cups) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 125 g cane sugar or granulated sugar
  • 1.5 apples
  • 1.5 teaspoons cinnamon Glaze
  • 3 tablespoons lemon juice
  • about 1/2 cup powdered sugar

Preparation

Dough Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Line a muffin tin with paper liners.

In a bowl, pour the yogurt, add the eggs and melted butter or vegetable oil. Stir with a spoon until the ingredients are combined.

In another bowl, sift the flour, add baking powder, baking soda, and sugar. Mix well.

Peel and quarter the apples, remove the cores, and cut into approximately 1 cm cubes. Mix with cinnamon.

Add 2/3 of the apples to the bowl with the flour mixture and mix.

Add the wet ingredients from the first bowl to the flour mixture with apples, and gently and slowly mix with a spoon until just combined (do not overmix!).

Divide the batter into the prepared muffin cups and place the remaining apples on top.

Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.

After baking, prepare the glaze by heating the lemon juice and mixing it with powdered sugar until smooth. Drizzle over the muffins.
