Moist and quick-to-make mini desserts cakes made from yogurt dough, no mixer required!
Ingredients
Dough
- Natural yogurt, 125 ml (1/2 cup)
- Eggs, 2
- Melted butter or vegetable oil, 125 ml
- Wheat flour, 240 g (1 1/2 cups)
- Baking powder, 2 teaspoons
- Baking soda, 1/2 teaspoon
- Brown or white sugar, 125 g
- Apples, 1 1/2 (peeled, cored, and diced)
- Cinnamon, 1 1/2 teaspoons
Glaze
- Lemon juice, 3 tablespoons
- Powdered sugar, about 1/2 cup
Preparation
Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners.
In a bowl, combine the yogurt, eggs, and melted butter or vegetable oil. Stir with a spoon until well mixed.
In another bowl, combine the flour, baking powder, baking soda, and sugar. Mix well.
Peel the apples, cut them into quarters, and remove the cores. Dice into approximately 1 cm pieces and mix with cinnamon.
Add 2/3 of the apples to the flour mixture and stir to combine. Set the remaining apples aside for topping.
Add the wet ingredients to the flour mixture and gently stir with a spoon just until combined (do not overmix!).
Spoon the batter into the muffin liners and top with the remaining apples. Bake for 20 minutes, or until a toothpick comes out clean.
For the glaze, warm the lemon juice and then mix with powdered sugar.
Once the cakes are baked and cooled, drizzle with the glaze.
