Millet Porridge with Caramelized Rhubarb

Delicious millet flakes (porridge) with caramelized rhubarb and chia seeds. A healthy breakfast or snack that you can prepare in just a few minutes.

Ingredients

Millet porridge:

  • millet flakes: 1/2 cup
  • chia seeds: 1 tablespoon
  • xylitol or sugar: 1 tablespoon
  • water: 1/2 cup
  • milk (e.g., almond, millet, oat, rice, or regular cow’s milk): 1 cup

Caramelized rhubarb:

  • rhubarb stalks: 2
  • brown sugar: 2 tablespoons
  • lemon juice: from 1/2 lemon
  • orange juice: 1/3 cup
  • optional: a pinch of vanilla seeds
  • honey or maple syrup: 2 tablespoons

Preparation:

In a pot, combine the millet flakes, chia seeds, and xylitol or sugar. Add water and milk, mix well, and bring to a boil. Reduce the heat and cook for about 12 minutes until the flakes are soft, stirring occasionally. Add more milk if needed.

Wash the rhubarb and cut it into 1.5 – 2 cm pieces. Place the rhubarb in a saucepan with brown sugar and heat for about 2 minutes until the sugar dissolves, stirring occasionally. Add the lemon juice and orange juice and cook over higher heat for about 8 minutes until the rhubarb softens and begins to break down. Add vanilla and honey or syrup midway through the cooking process.
