Mango Pancakes

Escape to tropical paradise with every bite of these mango pancakes! They’re fluffy, fruity and a breeze to make. With a hint of lime and a dollop of coconut yoghurt, they’re the perfect way to add a little sunshine to your plate.

Ingredients:

  • 500g pack of frozen diced mango, thawed
  • 200g (1 1/3 cups) self-raising flour
  • 2 tbsp caster sugar
  • 1 teaspoon baking powder
  • 1 egg, lightly whisked
  • 250ml (1 cup) milk
  • 20g butter, melted
  • Finely grated lime zest (optional)
  • Coconut-flavoured yoghurt, to serve

Method:

Blend half of the defrosted mango until smooth.

In a large bowl, sift together the self-raising flour, caster sugar and baking powder.

In another bowl, mix together the mango puree, milk, egg and melted butter. Add lime zest for extra zest if desired.

Make a well in the centre of the dry ingredients and pour in the mango mixture. Stir gently to combine.

Heat a non-stick frying pan over a medium heat and lightly grease with butter or oil.

Drop 1/4 cup of batter into each pancake and cook until bubbles appear on the surface. Flip and cook until golden brown.

Serve the pancakes with the remaining mango cubes and a dollop of coconut-flavoured yoghurt.
