Mango Oat Bars

Mango Oat Bars

Combining the natural sweetness of mango with the hearty texture of oats, these bars are the perfect snack for any time of day. Easy to make and even easier to love, Mango Oat Bars will be your new go-to recipe for a quick, nutritious bite.

Ingredients:

  • 375g chopped frozen mango
  • 150g wholemeal spelt flour, plus 2 tsp extra
  • 1 tsp ground cinnamon
  • 100g (1 cup) rolled oats
  • 2 tbsp coconut sugar, plus 2 tsp extra
  • 20g (¼ cup) desiccated coconut
  • 2 ½ tbsp honey
  • 80ml (1/3 cup) macadamia oil
  • ¼ tsp bicarbonate of soda
  • 2 tbsp flaked natural almonds

Method:

Preheat the oven to 180°C (350°F). Line a square baking tin with baking paper.

In a bowl, toss the chopped mango with the extra 2 tbsp spelt flour to coat. This will help prevent the mango from sinking to the bottom of the bars.

In a separate large bowl, mix together the spelt flour, ground cinnamon, oats, coconut sugar and desiccated coconut.

Warm the honey slightly to make it easier to mix, then add it to the dry ingredients with the macadamia oil. Stir until the mixture resembles a crumbly dough.

Sprinkle the bicarbonate of soda over the mixture and stir to combine.

Press half of the oat mixture firmly into the bottom of the prepared pan to form a base.

Spread the coated mango pieces evenly over the base.

Sprinkle the remaining oat mixture over the mango and press down gently.

Sprinkle the flaked almonds over the top and gently press into the mixture.

Bake for 25-30 minutes or until golden brown on top.

Allow the bars to cool in the tin before slicing and serving.
