Ingredients:
- 2 egg whites
- 1/2 cup (100g) caster sugar
- 2 teaspoons coffee essence
- 100g dark chocolate, melted
Method:
Preheat the oven to 250°F (120°C). Line a baking tray with baking paper.
In a clean, dry bowl, whisk the egg whites until they form soft peaks.
Gradually add the caster sugar, a tablespoon at a time, continuing to whisk until the mixture is shiny and forms stiff peaks.
Gently fold in the coffee essence, making sure it’s evenly distributed throughout the meringue.
Spoon or pipe small dollops of the meringue mixture onto the prepared baking tray.
Bake for about 1 hour or until the meringue is crisp and dry. Turn off the oven and leave the meringues to cool completely.
When cooled, drizzle or dip the meringues in melted dark chocolate for a mocha treat.
