Dough for Donuts
- 300g all-purpose flour (2 cups)
- 25g fresh yeast
- 125ml (1/2 cup) warm milk
- 1 teaspoon sugar
- 2 egg yolks
- 1 egg
- 4 tablespoons vanilla sugar
- a pinch of salt
- 40g butter AND
- Canned kajmak filling
- 1 liter vegetable oil or 4 cubes of lard ICING
- 1 tablespoon lemon juice or lemon liqueur
- 1 cup powdered sugar
- optional – 1 teaspoon gold powder food coloring and gold star sprinkles
Preparation
Dough for Donuts Prepare a sponge: crumble yeast into a large cup, add 2 tablespoons of flour, 1 teaspoon of sugar, and 1/4 cup of warm milk. Mix and leave to rise for about 15 – 20 minutes. Beat egg and egg yolks with vanilla sugar. Sift flour into a large bowl and mix with salt. Add the risen sponge and the rest of the warm milk to the flour. Mix slowly, adding beaten eggs at the end. Knead for about 15 minutes, then add melted butter and knead for another 5 minutes. Cover the dough with a cloth and let it rise in a warm place.
Once the dough has doubled in size (after about 1 and 1/2 hours), place it on a floured surface and knead briefly to remove air bubbles. Roll out to a 1 cm thick sheet and cut out 20 circles. From the dough, cut out circles using a sharp glass, place a teaspoon of kajmak filling in the center, place another circle on top, and seal the edges tightly, forming a ball in your hand, gently flatten it, and let it rise for about 45 minutes. Fry in batches (4 pieces at a time) in heated oil or lard, flipping halfway through frying. Remove to a paper towel.
Icing Heat lemon juice or liqueur, add powdered sugar, and mix. Decorate the donuts, sprinkle with sprinkles if available.
