Ice cream stuffed donuts with caramelized apples

Donuts infused with vanilla, filled with vanilla ice cream, and served with caramelized apples – try this dessert that literally melts in your mouth!

Ingredients

  • Sugar – 75 g
  • Butter – 5 g
  • Orange – 1
  • Green apples – 3
  • Calvados – 60 ml

Dough

  • Sugar – 50 g
  • Fresh yeast – 25 g
  • Eggs – 4
  • Butter – 50 g
  • Milk – 120 ml
  • Oil – 1 liter
  • Vanilla – 3 g
  • Whiskey – 20 ml
  • Wheat flour – 300 g

Additional

  • Raspberry – 120 g
  • Vanilla ice cream – 200 g

Preparation

Sift the flour into a bowl and make a well. Split the vanilla pod lengthwise. Use the back of the knife to scrape out the seeds. Boil the milk with the seeds and the vanilla pod, then let it cool down. Thoroughly mix the yeast with 2 teaspoons of sugar until you get a liquid consistency. Remove the vanilla pod from the warm milk. Mix the milk well with the dissolved yeast. Pour the mixture into the flour, mix lightly, creating a starter dough, cover with a cloth, and set aside for about 15 minutes.

Melt the butter in the microwave or in a saucepan. Mix the risen starter dough with egg yolks, the remaining amount of sugar, a pinch of salt, and liquid butter. Knead the dough until it starts to come off your hands. Add the whiskey and a little flour and knead a little longer. Dust the dough with flour, cover with a cloth, and let it rise.

Take the risen dough out onto a floured surface, knead, and dust with flour. Form a log from the dough, divide it into 10-12 equal parts. Then form balls from the dough and place them on a floured board. Cover with a cloth and set aside for 15-25 minutes. Alternatively, you can let the dough rise in an oven preheated to 30°C.

Fry the risen dough balls until golden brown in hot oil. Turn them several times to prevent burning. Drain the donuts from excess oil on paper towels.

Sprinkle sugar into a dry pan. Caramelize it without stirring, occasionally gently shaking the pan. Add a little orange juice and butter. Then, arrange peeled apple slices in the pan. Fry the apples on both sides until golden brown. Then pour in the alcohol and ignite. Transfer the apples to a plate. Pour a little more orange juice into the pan and heat until a smooth sauce forms.

Fill the fried donuts with ice cream using a pastry bag. Serve with caramelized apples, raspberries, and sauce.
