Ice Cream Sandwiches for Kids

Sweet, healthy, and cooling – ice cream sandwiches are made with tried and tested homemade ingredients, offering a chance to tame children’s appetites.

Ingredients:

Ice Cream:

  • Bananas – 2
  • Frozen strawberries – 300 g
  • Coconut milk – 400 ml
  • Vegan coconut yogurt – 600 g

Crispy Bread:

  • Oats – 30 g
  • Maple syrup – 160 g
  • Peanut butter – 125 g
  • Puffed amaranth – 250 g

Preparation:

Step 1: Prepare the Crispy Bread Mixture Combine oats with puffed grains in a large bowl. In a saucepan, heat coconut cream or peanut butter with maple syrup over low heat until they melt and combine. Then pour the melted ingredients over the oats and mix well.

Spread the prepared mixture onto a baking sheet lined with parchment paper. Flatten and press it down, then refrigerate for at least 1 hour until it hardens.

Step 2: Blend the Ice Cream Ingredients Combine the solid part of chilled coconut milk with yogurt and frozen fruits. Blend until smooth. Pour the mixture into the freezer and let it freeze for at least 1 hour until it solidifies.

Step 3: Prepare the Sandwiches Cut the bread block into even squares. Place a scoop of ice cream and some fruits (cut strawberries into quarters) on each square. Optionally, cover the sandwich with another piece of bread on top.

Serve immediately after preparation or store in the freezer.
