Ice cream sandwiches for kids

Sweet, healthy, and refreshing – Kinga’s ice cream sandwiches are made with proven, homemade ingredients, offering a chance to satisfy children’s appetites.

Ingredients

  • Banana – 2
  • Frozen strawberries – 300 g
  • Coconut milk – 400 ml
  • Vegan coconut yogurt – 600 g

Bread crispies

  • Oat flakes – 30 g
  • Maple syrup – 160 g
  • Peanut butter – 125 g
  • Puffed amaranth – 250 g

Preparation

Combine flakes with grains in a large bowl. In a saucepan, heat coconut cream or peanut butter with maple syrup over low heat until they melt and combine. Then pour the melted ingredients over the flakes and mix thoroughly.

Spread the prepared mixture onto a baking sheet lined with parchment paper. Smooth it out, press it down, and refrigerate for at least 1 hour to set. Combine the solid part of chilled coconut milk with yogurt and frozen fruits. Blend until smooth. Transfer the ice cream mixture to the freezer for at least 1 hour to set.

Cut the bread crispies into equal squares. Place a scoop of ice cream and fruits (cut strawberries into quarters) on each square. Optionally, cover the sandwich with another piece of bread on top. Serve immediately after preparation or store in the freezer.
