Blueberry Ice Cream

Tired of vanilla and chocolate? Why not try blueberry? This recipe will make you rediscover flavours you already know!

Ingredients:

  • 2 cups of heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Method:

In a saucepan over medium heat, combine the heavy cream, whole milk, granulated sugar and salt. Stir until the sugar dissolves and the mixture is heated through, but do not boil.

Remove from the heat and stir in the vanilla extract.

Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours or until completely chilled.

While the mixture is cooling, purée the blueberries in a blender or food processor until smooth. Set aside.

Once the cream mixture has cooled, stir in the blueberry puree until well combined.

Pour the mixture into an ice-cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm.
