A great start to a new day tastes like honey pancakes made with rice flour and topped with your favorite fruits. Make sure to greet them with a “good morning”!
Ingredients
Pancakes
- Sugar – 1 tablespoon
- Cinnamon – 0.5 teaspoon
- Eggs – 2 pieces
- Plain yogurt – 400 ml
- Rice flour – 400 g
- Coconut oil – 2 tablespoons
- Baking soda – 1 teaspoon
- Salt – 1 pinch
Additional
- Honey – 2 tablespoons
- Raspberries – 70 g
Preparation
Beat egg whites until stiff. Then combine them with sugar, salt, egg yolks, a tablespoon of melted coconut oil, and yogurt. Combine flour with baking soda and add to the other ingredients. Mix gently until a smooth batter forms. Melt the remaining coconut oil in a pan, wait until it heats up, and fry the pancakes on both sides over low heat until golden brown.
Transfer the pancakes to a plate and drizzle them with honey. Decorate with your favorite fruits. If they are large, cut them into pieces.
