Honey pancakes with fruit

A good start to a new day tastes like honey pancakes made with rice flour and topped with your favorite fruits. Be sure to say hello to them!

Ingredients – pancakes

  • Sugar: 1 tablespoon
  • Cinnamon: 0.5 teaspoon
  • Eggs: 2
  • Natural yogurt: 400 ml
  • Rice flour: 400 g
  • Coconut oil: 2 tablespoons
  • Baking soda: 1 teaspoon
  • Salt: A pinch

Additional

  • Honey: 2 tablespoons
  • Raspberries: 70 g

Preparation

Beat the egg whites until stiff peaks form. Then combine them with sugar, salt, egg yolks, a tablespoon of melted coconut oil, and yogurt. Combine the flour with baking soda and add it to the other ingredients. Gently mix until a uniform batter forms.

Melt the remaining coconut oil in a pan, wait for it to heat up, and fry the pancakes on both sides over low heat until golden brown. Transfer the pancakes to a plate and drizzle them with honey. Decorate with your favorite fruits. If they are large, cut them into pieces.
