Honey carrot muffins

Delicious carrot muffins with a yogurt and white chocolate glaze. A simple dessert that enchants with its taste.

Ingredients

  • Carrots (250 g)
  • Orange (1)
  • Butter (100 g)
  • Honey (4 tablespoons)
  • Milk (80 ml)
  • Eggs (2)
  • All-purpose flour (250 g)
  • Baking powder (1 teaspoon)
  • Baking soda (1 teaspoon)
  • Vanilla sugar (1 packet)
  • Cinnamon (1/2 teaspoon)
  • Walnuts (60 g)
  • Brown sugar (100 g)
  • Decoration: White chocolate (50 g) + Natural yogurt (4 tablespoons) + Chopped nuts

Instructions

Line a muffin tin with 12 paper liners. Preheat the oven to 180°C.

Peel and grate the carrots finely. Add finely grated orange zest (reserve a pinch for the glaze).

Squeeze the orange juice, measure 30 ml, and pour it into a pot (use the remaining juice for other purposes). Add the chopped butter and honey, and melt over low heat, stirring continuously.

Remove from heat, add milk and eggs, and mix everything with a whisk.

In another bowl, sift the flour together with baking powder and baking soda, add vanilla sugar, cinnamon, chopped walnuts, a pinch of salt, and brown sugar, and mix well.

Pour the wet ingredients into the dry ingredients, add the carrots, and gently, slowly mix with a spoon until combined.

Spoon portions of the batter into the liners and place in the preheated oven. Bake for 30 minutes.

For the glaze: melt the chocolate with the yogurt, add the reserved orange zest, drizzle over the muffins, and decorate with nuts.
