Homemade kissel can be made from any fruits, fresh or frozen. The amount of water and fruits is flexible, depending on the desired proportion of liquid to fruit.
Ingredients
- Fruits (e.g., 1/2 cup blueberries and about 1 1/2 cups pitted cherries)
- Cold water, 3 cups
- Sugar, about 3 teaspoons (or more to taste)
- Potato starch, 3 level teaspoons (plus more to achieve the desired thickness)
Preparation
Place the blueberries and pitted cherries in a saucepan, pour in 2 1/2 cups of water, add sugar, and bring to a boil. Cook for about 2 minutes.
Dissolve the potato starch in the remaining 1/2 cup of cold water and add to the boiling fruits. Bring to a boil and remove from heat to cool.
If the kissel is not thick enough after boiling, dissolve another teaspoon of potato starch in a very small amount of cold water, then add it to the kissel, mix, and bring to a boil.
