Homemade kissel

Homemade kissel can be made from any fruits, fresh or frozen. The amount of water and fruits is flexible, depending on the desired proportion of liquid to fruit.

Ingredients

  • Fruits (e.g., 1/2 cup blueberries and about 1 1/2 cups pitted cherries)
  • Cold water, 3 cups
  • Sugar, about 3 teaspoons (or more to taste)
  • Potato starch, 3 level teaspoons (plus more to achieve the desired thickness)

Preparation

Place the blueberries and pitted cherries in a saucepan, pour in 2 1/2 cups of water, add sugar, and bring to a boil. Cook for about 2 minutes.

Dissolve the potato starch in the remaining 1/2 cup of cold water and add to the boiling fruits. Bring to a boil and remove from heat to cool.

If the kissel is not thick enough after boiling, dissolve another teaspoon of potato starch in a very small amount of cold water, then add it to the kissel, mix, and bring to a boil.
