Homemade Granola

Baked oat flakes with nuts, pumpkin and sunflower seeds.

Ingredients

  • 2 cups rolled oats
  • 2/3 cup nuts (e.g., pecans, walnuts, cashews)
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1/3 cup coconut flakes
  • 1 teaspoon cinnamon
  • a small pinch of sea salt
  • 3 tablespoons honey
  • 1/4 cup brewed black or green tea + juice of 1 lemon
  • 1/2 cup raisins

Preparation

Preheat the oven to 175°C (350°F). Line a large baking sheet with parchment paper.

In a bowl, combine the rolled oats, chopped nuts, seeds (pumpkin, sunflower, sesame), coconut flakes, cinnamon, and salt. Mix everything together.

Combine the brewed tea with lemon juice and honey, then pour into the bowl with the oat mixture. Stir well to coat everything evenly.

Spread the mixture evenly onto the prepared baking sheet. Bake for 20-24 minutes until lightly golden, stirring twice during baking.

Sprinkle the raisins over the granola and let it cool completely.

Once cooled, transfer to a jar or a paper bag for storage.

Serve with yogurt, fruit yogurt, oatmeal, or drizzle with maple syrup.
