High Protein Pancakes

Boost your morning with these High Protein Pancakes, which combine the goodness of oats, chia and yoghurt. They’re a hearty, healthy way to start your day with energy and flavour. Simple, satisfying and delicious, these pancakes are waiting to become your new breakfast favourite!

Ingredients:

  • 90g (1 cup) rolled oats
  • 1 large banana
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 260g (1 cup) plain yoghurt, divided
  • 4 eggs, beaten
  • 1 teaspoon vanilla extract
  • 195g (1 1/3 cups) frozen berries

Method:

Place the oats, banana, chia seeds, baking powder, 130g plain yoghurt, eggs and vanilla extract in a blender. Blend until smooth.

Heat a non-stick frying pan over a medium heat and lightly grease with a little butter or oil.

Pour the mixture into the hot pan to form pancakes of the desired size. Cook until bubbles form on the surface, then flip and cook until golden brown.

Serve the pancakes with the remaining plain yoghurt and a topping of thawed frozen berries for a delicious and healthy breakfast.
