Ingredients – dry
- Spelt flour: 1.33 cups
- Rolled oats: 62.5g
- Desiccated coconut: 0.25 cups
- Cane sugar: 0.5 cups
- Baking powder: 1 teaspoon
- Baking soda: 1 teaspoon
- Salt: 0.5 teaspoon
- Hulled hemp seeds: 0.25 cups
- Seed and seed mix: 0.33 cups
Ingredients – wet
- Bananas: 2
- Canola oil: 0.33 cups
- Lemon juice: 0.33 tablespoons
- Vanilla extract: 1 teaspoon
- Plant-based milk: 165ml
Additional
- Banana: 1
- Seed and seed mix: 3 tablespoons
Preparation
Mash two bananas with a fork. In one bowl, thoroughly mix all dry ingredients. In another bowl, blend the wet ingredients. Then, pour the wet ingredients into the dry ones and mix until well combined.
Transfer the muffin batter into cupcake liners placed in a tray, filling each about ¾ full. On top of each muffin, place a slice of banana and a sprinkle of the seed and seed mix. Bake the muffins for about 20-25 minutes, or until a toothpick comes out clean.
