Guinness Chocolate Cake

Guinness Chocolate Cake is a decadent dessert that combines the rich, deep flavour of dark stout with the intense sweetness of chocolate. This indulgent cake is perfect for special occasions or as a luxurious treat to enjoy at any time. The unique combination of Guinness and chocolate creates a moist, flavourful cake with a subtle hint of the stout’s characteristic bitterness, which perfectly complements the sweetness of the chocolate.

Ingredients:

For the cake:

  • 1 cup (240ml) Guinness Stout
  • 1 cup (230g) unsalted butter, diced
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • ½ cup (120ml) sour cream
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt

For the frosting:

  • 8 oz (225g) cream cheese, at room temperature
  • 1 ¼ cups (150g) powdered sugar
  • ½ cup (120ml) heavy cream
  • 1 teaspoon vanilla extract

Method:

Preheat the oven to 175°C (350°F). Grease and line a 9″ (23cm) springform pan with parchment paper.

Combine the Guinness and butter in a medium saucepan over a medium heat. Cook until the butter has melted, then remove from the heat.

Whisk in the cocoa powder and granulated sugar until smooth.

In a separate bowl, whisk together the sour cream, eggs and vanilla extract. Add this mixture to the Guinness mixture and whisk to combine.

In another bowl sift the flour, baking powder and salt together. Gradually add the dry ingredients to the wet mixture, whisking until smooth.

Pour the mixture into the prepared tin. Bake for 45-50 minutes, or until a toothpick inserted in the centre comes out clean. Cool the cake completely in the pan on a wire rack.

Beat the cream cheese in a large bowl until smooth and creamy.

Gradually add the icing sugar, beating until well combined.

Add the heavy cream and vanilla extract and continue to whisk until light and fluffy.

When the cake has cooled completely, remove from the tin and transfer to a serving plate. Spread the icing generously over the top of the cake, creating a thick layer that resembles the frothy head of a pint of Guinness.

Slice and serve the cake. Enjoy the rich, chocolatey flavour with the slight bitterness of Guinness, perfectly balanced by the creamy, sweet icing.
