Get ready to steal the show at your holiday cookie exchange with our Grinch Cookies, inspired by Dr Seuss’ beloved character. These bright green treats, sprinkled with red and green M&Ms, are as mischievous in appearance as they are in flavour.

Ingredients:

  • 3 cups all purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 2/3 cups sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 6 drops light green food colouring (or more for a greener colour)
  • 1 1/2 cups red and green M&M’s

Method:

Preheat the oven to 175°C (350°F). Line baking sheets with greaseproof paper.

In a medium bowl, whisk together the flour, cornstarch, baking powder, baking soda and salt.

In a large bowl, cream the softened butter and sugar until light and fluffy.

Beat in the eggs one at a time, then the vanilla extract and green food colouring until well combined.

Gradually add the dry ingredients to the wet, beating until just combined.

Fold in the red and green M&M’s.

Drop the dough into tablespoon-sized balls and place on the prepared baking trays, about 2 inches apart.

Bake for 8-10 minutes or until the edges have set but the centres are still soft.

Leave the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
