Homemade granola

Do you eat muesli for breakfast every day? But who hasn’t forgotten to buy it in the shop? Thanks to this recipe, you can make it yourself at home.

Ingredients:

  • 3 cups large rolled oats
  • 1 1/2 cups sliced almonds (or your favourite nuts)
  • 1 cup unsweetened desiccated coconut
  • 1/3 cup flax seeds
  • 1/3 cup sesame seeds
  • 1/4 cup white chia seeds
  • 1/4 cup hemp seeds
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup liquid honey
  • 3 tablespoons melted coconut oil (or good quality olive oil)
  • 1 teaspoon vanilla extract

Method:

Preheat the oven to 150°C (300°F). Line a large baking sheet with greaseproof paper or a silicone baking mat.

In a large mixing bowl, combine the oats, sliced almonds, shredded coconut, flax seeds, sesame seeds, chia seeds, hemp seeds, ground cinnamon and salt. Mix well to combine.

In a separate small bowl, whisk together the liquid honey, melted coconut oil (or olive oil) and vanilla extract.

Pour the liquid mixture into the dry ingredients in the large bowl. Stir well until all the dry ingredients are evenly coated with the honey and oil mixture.

Spread the mixture evenly on the prepared baking tray in a single layer.

Bake in the preheated oven for about 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.

Remove the baking tray from the oven and leave the granola to cool completely on the tray. It will continue to crisp up as it cools.
