Gooseberry Dessert

A delicious summer dessert with tangy gooseberries and creamy cream.

Ingredients

  • Gooseberries, 600 grams
  • Heavy cream 30%, 50 milliliters
  • Honey, 3 tablespoons
  • Pork gelatin, 18 grams
  • Vanilla, 1/2 piece
  • Egg whites, 3 pieces

Preparation

  1. Clean the gooseberries.
  2. Cook the fruit with vanilla (scrape the seeds from 1/2 vanilla bean) over low heat, covered, for 10 minutes.
  3. Strain through a sieve.
  4. Add the cream and honey.
  5. Dissolve the gelatin in 1/4 cup of warm water.
  6. Combine the puree with the dissolved gelatin.
  7. Refrigerate until slightly set.
  8. Beat the egg whites until stiff peaks form, then mix them with the jelly before it sets completely.
  9. Serve the chilled dessert in dessert bowls.
