A delicious summer dessert with tangy gooseberries and creamy cream.
Ingredients
- Gooseberries, 600 grams
- Heavy cream 30%, 50 milliliters
- Honey, 3 tablespoons
- Pork gelatin, 18 grams
- Vanilla, 1/2 piece
- Egg whites, 3 pieces
Preparation
- Clean the gooseberries.
- Cook the fruit with vanilla (scrape the seeds from 1/2 vanilla bean) over low heat, covered, for 10 minutes.
- Strain through a sieve.
- Add the cream and honey.
- Dissolve the gelatin in 1/4 cup of warm water.
- Combine the puree with the dissolved gelatin.
- Refrigerate until slightly set.
- Beat the egg whites until stiff peaks form, then mix them with the jelly before it sets completely.
- Serve the chilled dessert in dessert bowls.
