Ingredients
- Eggs: 2 pieces
- Brown sugar: 250 g
- Cocoa: 10 g
- Butter: 100 g
- Wheat flour type 450: 600 g
- Honey: 250 g
- Gingerbread spice: 10 g
- Baking soda: 5 g
Glaze
- Milk chocolate: 200 g
- Butter: 60 g
- Heavy cream 30%: 200 g
Preparation
Melt the honey with the butter in the microwave.
In a large bowl, mix the flour, cocoa, gingerbread spice, baking soda, and sugar. Add the eggs and melted honey with butter. Knead the dough.
Wrap the dough in plastic wrap and refrigerate for 2-3 days.
Roll out the dough to a thickness of about 3 mm, cut out gingerbread shapes. Bake the gingerbread cookies for about 8 minutes at 180°C.
Glaze Boil the cream. Pour it over the crushed chocolate and stir until completely melted. Add the softened butter and mix.
Pour the glaze over the cooled gingerbread cookies and decorate with sugar sprinkles.
