Giant Pancake Cake

Layered pancakes with a creamy cheese filling and a thick chocolate glaze. An impressive way to serve a simple dish!

Ingredients

For decoration

  • Banana – 0.5 pc.
  • Grapefruit – 0.5 pc.
  • Mandarin – 0.5 pc.
  • Orange – 0.5 pc.

Cheese filling

  • Powdered sugar – 60 g
  • Eggs – 2 pcs.
  • Vanilla flavored cream cheese – 150 g
  • Full-fat cottage cheese – 275 g

Pancake batter

  • Vanilla sugar – 2 packets
  • Eggs – 3 pcs.
  • Cake flour – 200 g
  • Whole milk – 500 ml
  • Oil – 5 tablespoons
  • Salt – a pinch
  • Sparkling water – 100 ml
  • Raspberry jam – 220 g

Chocolate glaze

  • Butter – 1 tablespoon
  • Heavy cream (30%) – 100 ml
  • Dark chocolate – 100 g

Preparation

Pancake Batter Mix all the ingredients. Let the batter rest for 20-30 minutes, then fry pancakes on a small pan with a diameter of 17 cm.

Chocolate Glaze Bring the cream to a boil, add chopped chocolate, stir until the chocolate is melted. Finally, add softened butter.

Cheese Filling Whisk egg yolks with powdered sugar, gradually add cottage cheese and cream cheese. Mix until smooth.

Assemble the cake by alternately spreading pancakes with cheese filling and raspberry jam. Finish by pouring chocolate glaze over the top and decorating with fruits.
