The beauty of this recipe is its versatility. You can mix in your favourite cookie fillings to create a personalised treat that satisfies your cravings. Its impressive size makes it a centrepiece for any occasion, whether it’s a birthday party, a family gathering or just a special treat for the weekend.

Ingredients:

  • 200g room temperature butter, plus extra for greasing
  • 250g light brown sugar
  • 2 egg yolks
  • ½ tsp vanilla extract
  • 275g plain flour
  • 1 tsp baking powder
  • 150g chocolate chips
  • 100g other biscuit fillings (such as pretzels, chopped nuts, pieces of fudge or toffee, marshmallows)
  • vanilla ice cream, to serve (optional)

Method:

Preheat your oven to 190°C (375°F) or 170°C (340°F) for fan ovens. Grease a 23cm round cake or pizza tin.

In a large bowl, cream the butter and light brown sugar until light and fluffy.

Whisk in the egg yolks and vanilla extract.

In another bowl, whisk together the plain flour and baking powder.

Gradually add the dry ingredients to the wet mixture and mix well.

Fold in the chocolate chips and your choice of cookie filling.

Press the cookie dough evenly into the prepared tray.

Bake for 15-20 minutes or until the edges are golden and the centre has set.

Allow the cookie to cool slightly in the tin, then transfer to a wire rack to cool completely.

Serve in slices with a scoop of vanilla ice cream on top if desired.
