Beat the heat with these delicious Fruit Popsicles, bursting with the vibrant flavours of fresh strawberries and a hint of tangy sweetness from strawberry jam. This recipe offers a refreshing twist on traditional popsicles, making it the perfect treat for children and adults alike on warm summer days.

Ingredients:

  • 12 oz fresh strawberries, rinsed and quartered (about 3 cups)
  • 1/4 cup strawberry jam
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • Pinch of kosher salt

Method:

In a blender or food processor, combine the fresh strawberries, strawberry jam, granulated sugar, fresh lemon juice and a pinch of kosher salt.

Blend until smooth and well combined. Taste and adjust for sweetness or sourness by adding more sugar or lemon juice if desired.

Pour the strawberry mixture into popsicle moulds, leaving a little space at the top to allow for expansion during freezing.

If you don’t have popsicle moulds, use small paper cups or ice cube trays. Place sticks or small spoons in each mould.

Place the filled popsicle moulds in the freezer and freeze for about 4-6 hours or until completely set.

To release the popsicles, run warm water over the outside of the moulds for a few seconds to loosen them.

Serve immediately and enjoy these refreshing and fruity popsicles!
