A mosaic of textures and flavours, these bars combine the natural sweetness of dried fruit with the nuttiness of seeds and the heartiness of oats. Perfect for a nutritious snack or a quick breakfast, each bar is packed with energy and feel-good ingredients.
Ingredients:
- 140g Light Muscovado Sugar
- 3 tablespoons golden syrup
- 140g butter
- 250g rolled oats
- 85g raisins or sultanas
- 85g chopped walnuts (or your favourite nuts, roughly chopped)
- 50g sesame or mixed seeds
- 25g dried cranberries
- 50g ready-to-eat apricots, finely chopped
Method:
Preheat the oven to 160°C.
Line a 20cm x 30cm baking tin with baking paper.
In a large saucepan, melt the butter, muscovado sugar and golden syrup over a low heat, stirring until smooth.
In a separate bowl, mix together the oats, raisins or sultanas, chopped nuts, seeds, dried cranberries and chopped apricots.
Pour the melted butter mixture into the bowl with the dry ingredients and stir until all the oats and fruit are coated.
Pour the mixture into the prepared baking tin and press down firmly to create an even layer.
Bake in the preheated oven for 25-30 minutes or until golden brown.
Allow to cool in the tin before slicing into bars or squares.
