Fruit Crumble with Protein Ice Cream

A dessert sweetened with erythritol, served with protein ice cream, making it a great idea for a sweet snack. The crispy crumble topping and tangy fruits underneath create a dreamy combination.

Ingredients

Crumble Topping

  • 1 tablespoon rolled oats
  • 15 g almond flour
  • 0.25 teaspoon cinnamon
  • a pinch of salt
  • 1 teaspoon peanut butter
  • 1 teaspoon erythritol

Fruit Mixture

  • 150 g frozen mixed berries
  • 0.25 cup water
  • 1 tablespoon chia seeds
  • 1 teaspoon erythritol

Serving

  • 1 scoop salted caramel-flavored protein ice cream

Preparation:

Crumble Topping Rub all the ingredients together in your hands until well combined.

Fruit Mixture In a small saucepan, bring the frozen berries, water, and erythritol to a boil. Once the berries begin to break down, remove from heat and stir in chia seeds. Mix well and transfer to an ovenproof dish.

Assembly:

Step 1: Bake the Fruit Crumble Spread the crumble topping over the fruit mixture and bake for about 10–15 minutes, until the topping turns golden brown.

Step 2: Serve the Dessert After removing from the oven, let the dessert cool slightly so it’s warm but not hot. Serve with a scoop of protein ice cream.
