Forest Moss Cupcakes

Unique cupcakes inspired by the famous forest moss cake! Try Paweł’s latest recipe and enjoy a colorful, sweet addition that’s perfect for the Easter table.

Ingredients:

Green Moss Cupcakes:

  • Baby spinach – 200 g
  • Lime – 1 piece
  • Eggs – 3
  • Sugar – 120 g
  • Sunflower oil – 100 ml
  • All-purpose flour – 250 g
  • Baking powder – 2 tsp

Creamy Frosting:

  • Cheesecake cheese, ground – 500 g
  • Heavy cream (36%) – 200 ml
  • Powdered sugar – 2 tsp

Decorations:

  • Fig jam – 150 g
  • Blueberries – 50 g
  • Raspberries – 50 g
  • Pomegranate seeds – 2 tbsp
  • Sugar decorations – 20 pieces

Preparation:

Step 1: Blend the Spinach Place the spinach in a tall container and blend. Grate the lime zest and squeeze the juice. Add these ingredients to the spinach and blend again.

Step 2: Whip the Eggs Beat the egg whites with the sugar until stiff peaks form. Add the egg yolks one at a time, waiting for each to be incorporated before adding the next.

Step 3: Combine the Cake Ingredients Sift and mix the flour and baking powder. Gradually add this to the beaten eggs, gently mixing with a whisk. Then add the oil and blended spinach, and mix again.

Step 4: Bake the Cupcakes Grease the cupcake pan with butter and lightly dust with flour. Fill each cavity halfway with batter. Bake the cupcakes for about 30-35 minutes in a fan-assisted oven preheated to 165°C (329°F). Cool the baked cupcakes.

Step 5: Prepare the Frosting Combine the cheesecake cheese and heavy cream in a stand mixer bowl. Add the powdered sugar and beat on medium speed until fluffy. Chill the frosting in the refrigerator.

Step 6: Fill the Cupcakes Cut off the tops of the cupcakes and hollow out a bit of the center to make room for the frosting. Place the cut-off pieces in a food processor and blend into fine crumbs. Place 1 tsp of fig jam into each cupcake.

Step 7: Decorate the Cupcakes Transfer the frosting into a piping bag. Pipe the frosting into the center and over the top of each cupcake, creating a slight mound. Generously sprinkle each cupcake with the reserved cake crumbs and decorate with fresh fruits and sugar decorations.
