Forest moss cupcakes

Unique cupcakes inspired by the famous forest moss cake! Try out this recipe and create a colorful, sweet addition that will be perfect for your Easter table.

Ingredients

  • Baby spinach – 200 g
  • Lime – 1 piece
  • Eggs – 3 pieces
  • Sugar – 120 g
  • Sunflower oil – 100 ml
  • Wheat flour – 250 g
  • Baking powder – 2 teaspoons

Cream cheese frosting

  • Ground cottage cheese – 500 g
  • Heavy cream (36%) – 200 ml
  • Powdered sugar – 2 teaspoons

Decorations

  • Fig jam – 150 g
  • Blueberries – 50 g
  • Raspberries – 50 g
  • Pomegranate seeds – 2 tablespoons
  • Sugar decorations – 20 pieces

Preparation

Place the spinach in a tall container and blend it. Grate the lime zest and squeeze the lime juice. Add these prepared ingredients to the spinach and blend again. Whisk the egg whites with sugar until stiff peaks form. Then, add the egg yolks one by one into the beaten egg whites, waiting for each one to incorporate before adding the next.

Sift the flour and baking powder and mix well. Then, sift them into the beaten eggs and gently fold the ingredients together using a whisk. Add the oil and blended spinach to the batter and mix again.

Grease the cupcake molds with butter and lightly dust with flour. Fill each mold halfway with the batter. Bake the cupcakes for about 30-35 minutes in an oven preheated to 165°C with the convection function. Once baked, let the cupcakes cool.

Transfer the ground cottage cheese and heavy cream to the bowl of a stand mixer. Add powdered sugar and beat on medium speed until the frosting is fluffy. Store the prepared frosting in the refrigerator for a while. Slice off the tops of the cupcakes and hollow out a portion of the center to make room for the frosting. Crumble the sliced-off parts of the cupcakes into fine crumbs. Fill each cupcake with 1 teaspoon of fig chutney.

Transfer the cream cheese frosting into a piping bag. Pipe it into the center of each cupcake and cover the top so that a gentle peak forms. Then, generously sprinkle each cupcake with the previously crumbled cupcake crumbs. Additionally, decorate with fresh fruits and sugar decorations.
