Fluffy Kefir Pancakes

Quick pancakes for breakfast or afternoon snack

Ingredients

  • 200 g kefir
  • 2 eggs
  • 150 g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil

Preparation

  1. Pour kefir into a bowl, add eggs, and whisk with a fork. Add flour (preferably sifted directly into the bowl), baking powder, baking soda, sugar, and oil. Mix with a whisk or gently whisk until the ingredients are combined into a smooth and uniform batter.
  2. Heat a frying pan, ladle about 1 full tablespoon of batter onto it, leaving some space between each pancake. Fry over moderate heat for about 2 minutes, until they rise and are nicely browned on the bottom. Then, flip them over with a spatula and repeat frying.
